These come together in no time and are an easy nut-free, oat-free choice for holiday gatherings. You can change up the flavour by subbing coconut flakes or hemp seeds for the cinnamon.
- 1 cup (packed) dates, pitted and chopped
- 1 cup cooked brown rice, cold from the fridge
- 3 tbsp cocoa powder
- 1 tsp vanilla extract
- cinnamon or other topping
Place all ingredients except cinnamon in a food processor and process until it becomes one large ball of dough on the blade. Roll into balls with your hands. Roll in cinnamon or another topping. Store in the fridge or freezer. Makes 9.
Note: Even “pitted” dates can still contain the odd pit, so chop them in half to be sure.
